    Perhaps research, experiment, and take notes as needed. Try to relax and enjoy this part of the process. Once you get to a point you are comfortable decide how to proceed. Ask yourself: Do I need more information? Am I comfortable enough to wing it or should I script the episode?
    Above all try to enjoy the process, do what you can - when you can. Be selfish. I think most viewers would prefer that you not get frustrated or burned out.

    You're not the only creator to encounter this challenge. I think as your projects become more advanced a bit of pre recorded footage and post voiceover is absolutely fine.
    The main thing is that you feel like youre having fun. If you dont enjoy it then your videos will suffer. And besides, why do any hobby at all if its not fun.

    I'd say write a little note for yourself and show it in the beginning of recording time.
    Then fiddle use voice overs until something interesting happens.

      You don't have to even keep that in. But it'd be a nice reference for you with the editing process.
