Ginza is so chi-chi I was initially turned off by the night view, but I was impressed at the thought that went into each dish, particularly the lobster and the kue dishes, but also the venison--they used to say 'la sauce eat toute' but I'm just imagining those lobster or mussel reductions no wonder he kept dunking the bread. To whip the cream on the spot may have been a bit much--but I wasn't sure about the butter balls, the taster should have shaved off slivers like they used to serve it in France in the '60s.
