If we want to think about the most traditional Iranian food or know the authentic taste of Iran according to tourists' taste, the first option that comes to mind is Abgousht. The food that has been imprinted in our memories since childhood in family gatherings with its traditional customs is still considered one of the popular dishes to touch those memories again in family weekend gatherings.
This traditional food is so intertwined with our lives that we may never think about when its history goes back and whether it has changed during this past time or not. Has the status of this food changed among people over time? And another question is, is Abgousht just a common style we eat or does it have its own types? In this article, we will address all these issues and try to provide comprehensive and useful information about traditional and authentic Iranian food
History of broth
The exact presence of Abgousht among Iranians is not exactly known, but the oldest document found that mentions this dish dates back to around the 8th century. Of course, in the old texts, this dish is not mentioned by the name Abgousht, and it is mostly called "Shorbaj". Also, much earlier than this, this food was common among the people as pea water or ice cream. Therefore, cooking food with broth content goes back years ago.
Of course, the name Yakhni is still heard among some cities like Kazeroon and Shiraz, which is a food like Abgousht. But in general, broth is a food that is common in almost all of Iran, and it is currently the food of the middle class of society. In the past, this dish was also known as party food and served as a hearty dish at parties.

Today I am taking my 16 year old son out for a treat in London - it was his birthday this week. We are going to eat at a fine dining restaurant, and I am sure the bill will be exorbitant. This dish cannot be 1000 years old. Tomatoes were not known outside Americas until the late 15th century. For a very long time Europeans and Asians didn't eat tomatoes. Also, tomato paste is invented about 300 years ago.

Basically, two key ingredients (tomatoes and potatoes) of the dish didn't exist in Europe and Asia up until 17th cc, and one key ingredient (tomato paste) didn't exist in the world until the 19th cc. If you are talking about the cooking technique, then I can agree with you. Overall, there is 6-8 cooking techniques in the world. All the best.

This dish is very traditional and it's name which is Persian says all, as it's written on the title of this video, AbbGousht, literaly mean meat and it's juice. It was lamb meat, chickpeas, onion and spice (termetic, black paper and salt), in it's way to the history someother ingridient been added. And something else, it does not have much to do with cooking 'Abbgousht', you're not quite correct about the potatos, original potatos are some less sweet, healthy potato which you find it in middle east, calls Jerusalem artichoke, and there is sauer versian of tomato in Iran, these 2 plus some spice and greens with veniger, is a traditional Chatney which is being serve while eating Abbgousht.

I used to live on the creek in sharjah, uae, next to bank street decades ago. There iranians would come from iran in boats laden with wonderful iranian goodies, saffron, caviar, whole spices, nuts, dried fruits, beautiful little teacups and plates. There were Lovely little cafes where iranian shopkeepers would eat daily. A wonderful iranian biryani seller on the street behind, who set up his stall near the museum, food was yummmy..
One thing i learnt about iranian food, it is an acquired taste. Subtlety is its hallmark, probably from centuries of evolution and refinement by the ancient persian culture, learning and tweaking from experience.
Those who like fast food, indian food and chinese food, will not like it at first. It will seem bland. Europeans may take to it immediately as it is not overly spiced. But the more you eat it the more you will crave it, you will become addicted to it in the end. It will rarely give you indigestion, unless you eat too much. Not too many strong spices or sauces added, it is mainly flavoured with organic ingredients, fruits, vegetables, berries, leaves, nuts, seeds, whole spices, so spice level is milder and you can taste the actual fresh ingredients, and the rest is left to the cooking process and the heat of the fire to do the job.
Lots of dum cooking so things stew in their own juices and also high heat and smoke used to cook kebabs etc so the flavour of coal or wood permeates the food. Food cooked in the ancient, simple way our ancestors did, the refinement is from the thousands of years of trying and testing to know what mixes and matches with what, what should be cooked for how long or how little. Not as complicated as french cooking but still one of the greatest cuisines in the world, very similiar to kashmiri cooking in india, though that is much spicier, and also to parsi cooking.
An yet undiscovered treasure, though many iranian restaurants in the usa now.
One thing i am puzzled about is why the food is separated from the sauce and mashed by customers individually, why that is not done for them by the restaurant. Guess it will get cold before being brought to the table, and for so many customers, they would have to wait forever before the mash is prepared for each table, and the act of mashing is part of the ritual involved to whet your appetite at the table, aĺl the senses are in play, touch, smell, sight, sound, ancient humans got their hunger juices flowing from preparing the food, we just sit at a table and wait for it. Hunger is the best sauce.
Though cooking dampens my appetite, dont know why, guess i am already full with all the flavours i have inhaled, 😂. This channel is wonderful, doing a great job. Keep them coming. Hope to visit iran someday.
