So I’m in the Chicago area and there’s a company called happy lobster truck they’ve been around for a couple years. They either deliver to your home or you can pick it up at their truck location which goes all over the place you have to follow them online. I just went to look at their pricing they sell sandwiches exactly like you made with the lobster and the buttered brioche buns and they’re delicious! It’s $24 for one sandwich or $45 for two and you had twice as much lobster. Just wanted to share the comparison! 😊

My wife buys frozen crawfish in the bag from Costco. Then she uses a typical lobster roll recipe using them. For bread she uses garlic bread which Costco sells frozen. For $20 she’s able to make so many rolls and they taste so good.
A pound of lobster in Portland, Maine cost 65. Dollars not including the butter and buns. The average cost for one lobster roll is anywhere between 31 and 40 dollars. So trust me, you got a great deal if the lobster was great tasting.
Yes, you could just buy a raw lobster, and brioche buns, but it is labor intensive and that butter has really interesting ingredients ( I saw online) like sherry, saffron, lobster base +, that you could not duplicate. Plus that frozen lobster will be much fresher than the kind in a tub you can buy at supermarkets. Real fresh lobster meat is about $75/lb. IDK how much they give in this. And if you buy a fresh lobster roll, they offer them with butter on top instead of mayo but that is just plain melted drizzled, not flavored. You made them perfect! And I agree $40 is too much!

In the past, Costco has sold thawed previously frozen packages of just the lobster claw and knuckle meat with shell My guess is that Costco sells these lobster claw and knuckle packages once a year. If I remember correctly, the price was less than $10 a lb. If you love all lobster meat, these packages are a much better deal. My opinion is that the lobster claws and knuckles are not as flavorful as the tail.

I thought these were really, really good. I added a layer of the Habanero JeeSauce. I would buy them again especially at the $10 off price! Yes coleslaw would be a great addition! I don't like quite that much lobster on my sliders either. Since it's on sale, it is going into my freezer for later! I say it's worth the price.
It would of been interesting to have the weight of the lobster claw meat to better understand the real value. Claw meat cost about $40 / pound by itself
You would think since this package is so expensive, more prep is done for you for convenience. $40 is expensive and can cover a surf and turf meal here with tips
