I have never seen anyone use beef consommé as a cooking liquid (I have seen it in French onion soup recipes), but I am sure it adds a lot of flavor. I had no idea that tarragon vinegar even existed! I agree that it doesn't make sense to buy one ingredient just for a few tablespoons, so best to substitute somehow. 25 minutes? Sometimes things take longer for no reason. Wow, everything looks amazing. Parmesan, tarragon, onions...it does sound odd, but I am sure it would be great. Thanks for sharing!

I love potato salads that are not mayo based. They have such a rich and tangy flavor. That consume probably adds so much flavor when the potatoes are cooking! And you don’t have to worry so much about it spoiling at a picnic like Mayo based potato salads 🥰

Maybe the name ties into it working better for an outdoor event, in the heat, than a mayo based salad would. Regardless thanks for the video. Hadn't thought about tarragon vinegar in ages. Or the pear-shaped bottles the Heinz speciality vinegars used to come in. I remember making a papier-mache cat in art class using one of those. Have a great 4th!

Hi Eirrenia! Welcome! This is definitely delicious! I'm bummed you have the issue with acid. I really can't think of a good substitute that wouldn't have the acid kick without the sweetness. I think in this particular dish, pineapple may not work with the flavor profile. But don't let that stop you from trying it! I love to experiment! And if you do, please let me know! And I have plenty of recipes from the past here with no acid that I hope you enjoy. 🍸❤️

About that time - mid to late 60s - a church friend of my mother vacationed in Texas - Astrodome, Six Flags, etc. When she came back she was talking about German potato salad. Mom never made it from scratch I don't think but about that same time Read's had and still does have canned German potato salad. It doesn't have all the ingredients of your recipe which sounds much yummier.
