The operator clearly has in his mind a three dimensional image of a Hurley and then cuts away the wood that is not a Hurley until only a Hurley is left. Without that mental template making a Hurley will be difficult or impossible so buying one makes more sense.

Would Hickory or Oak make a good choice?

willow is the only other wood i've heard of being used. Torpey are now developing "bambú" hurleys.... hickory or oak might be too heavy.
