I don’t think I can get a kadai like yours in South Africa 🇿🇦 please share we can buy one in India. I love it
U r very graceful
Smita Doe Ji,
Every veg. You are cooking
Very nicely. God bless you 🙏
Love you❤
Tks for the tip ...however do mention propotion of oil to the onions that needs to be used .
There is no need for a proportion. Just fill the wok up to almost near the brim with oil and get going batch after batch for the onions to swim around like a puppies in a pool! But the calories can't be dried in the sun! 😅
What a lovely tip. I love them in biryani but I fry it in ghee. But the better option is deep frying in oil. I will definitely try your way. I almost bought the ready fried from a grocery store but it was far too large a quantity for me being alone. And the freezing tip is amazing. I only use it for biryani. What else can you use fried onions for? Regards from South Africa 🇿🇦 you’re a lovely host ❤
You can use it in gravies like chicken, mutton, eggs, peas. Fried onions make great curries. You will need to grind and use them. You can also sprinkle over pulaos. You can add a few spices and stuff them into parathas.
Haha...the instruction part 3.15 ...was so relatable 😅😅
Ma'am i love your recipes....can you give your house tour....just a request.
I am really fan of your.
Thank you, Smita, so well explained.
I have a lovely 40-50 years old pital kadhai, but no place to get kalai done. Can it be used for regular cooking of meals? Would love to put it back to use.

Hi Smita Thank you for your the recipe. Just a few questions
1) you said you keep you Birista in the freezer will the Birista not soften once defrosted?
2) how long will the Birista keep in a jar?
Nice it is. Mam you have done any cooking course or it's just your liking ?
Do you add salt to your onions before frying ?
One more tip
Add some sprinkled SUGAR to the onions before frying them..Sugar helps caramelize the onions faster
Freezer or fridge?
Use small size onions
Secondly do research use of airfryer to do the barista and advice us accordingly
I prefer to make barista in my air fryer. Very convenient. Takes a bit longer than frying in oil though, as I need to air fry them at lower temperature.
So I fry them at 200*C for about 8 to 10 minutes and then at 160 * C till they are done. It may take up to another 15 - 20 minutes. We need to turn them over once or twice.
We cannot fry large batches at a time in an air fryer, as onions have to be spread in a single layer. Before frying I mix about 1 or 2 tsp oil to the onion slices and rub gently by hand.
I would like to try sun drying first and then air frying, to see if it reduces the roasting time.
I also would try roasting them in the oven, as I think that would also come out nicely and perhaps can hold larger batch at a time.
Thank you Ms. Smitha for the tips.
You are frying it for too long. They will get even darker due to carry over cooking
Say something new please.
Your kitchen is very neet & clean
