      I do, and what's crazy is that I've had to work this entire time. I just happen to enjoy cooking and decided to get into baking, and how wholesome this team is at Proof drew me to them instantly. I do wish though they shared some recipes, I'd trust theirs no question

    Everytime i learn something new about bread making i realise that i know nothing about bread making. I can't fathom the amount of recipe testing you must have done in the early days of your bakery. I'm starting as a part time baker in my neighborhood gourmet grocery store next week and i can't wait to begin testing and testing sourdough recipes on higher volume and your tips and tricks are priceless to me right now :).     As a classically trained Pastry Chef and baker of 40 years I applaud your efforts that you are doing to sustain the community I wish I was part of the situation that you’re in there’s a place close to me here in Maplewood Mo that has similar ideas with shops to barter with.

    I like your take on the frangipane croissant, here in Belgium we actually laminate the dough once or twice (depends on the bakery) with frangipane then swabbing with syrop (here it's more like a sugar water almost) right after it comes out of the oven making the water instantly reduce from the residual heat and crusting it with syrop

    So very interesting - a brilliant advocate for the Live-work-space concept - trying to integrate these sorts of businesses into a light-commercial/residential zone... When I was in Chicago, live-work loft spaces and incubator buildings in old warehouses were an upcoming Thing into the early 90's, I don't know what happened to that, but I always thought it a neat idea - when remembering being in a southern city in UK after the shops closed the place was dead, there wasn't a soul about, the heart was sucked out when the tills stopped ringing, and that seemed weird. And you're so right about people struggling just to pay the rent - our favourite variety store has suddenly closed, I suspect the rent is too high, there's a bakery in the precinct which is my favourite & I'd be devastated if that couldn't afford to stay - and we are a very small community here. I am quite in awe of your work & ethics, it's little wonder you are such a success, you and Amanda are the sort of people we want to be successful. Seems like you are making one of my favourite pastries, the chocolate & almond croissant - sadly, too often ruined, wish I was in Arizona to taste yours! Take care you all - great to see the teamwork in the background... 😉🦘🐾👍🥂

    We have a similar bakery that we started here in Oslo (though I'm originally from Idaho). Everything is handmade. I work 9 p.m. to 5 a.m. - it's a lot of work but we bake amazing bread and pastries!

    Thank you so much Jon for these wonderful videos. You're a man of ethics, integrity and humility. Even if its a small business, there are so many things to take care of to stay afloat initially and then become good at it. Lot of start ups fail bc they overlook, neglect or underestimate certain things. I have one complaint though. Does it cost a lot for you to shift from plastic packaging to paper packaging? If so, i can understand it. If not then why not? Every garbage especially plastics, wind up in the ocean. I wish you success in taking the bakery to a new level and hope more people would support local farmers be it bread or produce.

    Thank you for sharing. I know of individuals whom not only lost their homes due to business failing but still have large debt to pay back because sale of home didn’t cover all the money owed. My wife thanked me for saying no on the franchise she wanted us to get into. I didn’t want to risk losing my home, because of business failing. The location being offered I knew it wasn’t going to work because malls are decreasing in traffic and mall it was in had significantly reduced traffic, some malls are virtually dead. To me it it important to own building and land so that you don’t have to pay lease and have it increase dramatically because landlord want more revenue. I have seen landlords price a business out of building so landlord can refresh’s the businesses in their buildings. I like how you are building your business. Keep up the good work and vision.

    We just had our assortment box delivered to our doorstep this very morning! There's only two of us, so it should survive until Sunday...maybe! Lviv in the house! Well, family heritage, anyway My mom was a home baker extraordinaire and made many, many central European pastries, and other baked goodies that were/are to die for. Kiefle' was a fave of mine. There are enough things to try that would pique one's curiosity as to how they would come out. Traditionally, Pierogi is such the mainstay of the diet over there (and here as well! Believe me :-)) It' a bummer it wouldn't' fit in your repertoire.

    Thanks, another good video. I find that it's not always about what you are doing in the video, it's also about listening to what you are saying in the video.     Love this channel, but with the covid surge in AZ, I worry about the lack of facemasks indoors. It's annoying, but it can save lives

      This video was shot some time ago. Our Friday crew has all been wearing masks during the shift. Most of the week we have basically only 1-2 people per entire room, but on Fridays when we have a larger crew, we wear masks now as a result of the surge.

      @@Joesmith-fu4ps Not true. You can't learn baking overnight with TH-cam. He could give his true recipe but you can't have the same bread because of process and skills he has. He is also using unique blend of flour.

    Happy to see your “garage” project is turning into a more of a small business operation.
    Did you consider using paper bags instead of the micro-perforated plastic bags? Almost all artisan bread sold where I live is sold in paper bags. They are open so people can take a peek at what’s inside and I would think they have a smaller carbon footprint though I haven’t actually researched this. Curious to know what drove your decision.

      Probably will shift to window paper as a compromise. Prior to pandemic our loaves were on shelves bare and packaged at market into paper. Then packaging became a priority fast, and that’s just what we went with in a hurry.

    Hey, I’m from europe (hungary), and one of my favourite stuff is cottage cheese, or at least, a version of it (here it is pretty dry, called “turo”.)
    I never saw much of it used in US, or in england, especially in cakes.
    Do you guys have any bakery stuff filled with cottage cheese?
    We have a ton of bakery and cakes that is done with it.

    Have you ever made Babka (bábovka here in Czech) in the bakery? From what I heard in poland its risen and made from a dough while here for us it's basically a cake batter that's poured into a fancy bunt pan.
    Edit: Also I am excited to watch you grow and learn from the other side of the globe.

      I have 2 personal 5 year goals: grow a lot of fruit trees that influence the bakery...be able to spend some time in bakeries that serve completely different cultures, and learn. One of the places I will certainly spend time in when possible is Poland, but truly our family lives right near the Czech border, so maybe I need to spend some time in a Czech bakery at some point too.

      And hot! And long hours. And if you have a bake failure you have to start again. And don't start me on "the ovens broken down "! Baking is hard work but of course rewarding when you see these beautiful products.

      Chezarae Yothers unless your local bakery is a true artisan bakery like proof you will be shocked at how much is outsourced and brought in frozen. I’m a bread baker and the only product that’s made fresh daily is my bread. Everything else is either partially made in house or entirely outsourced.

      Mike most people have only had factory bread- real bread is real food with real nutrients. I so would love to try some of the pastries. Saw his prices- very reasonable.

      We hope to show footage of the markets at some point. With the virus it’s such a different vibe than what is normal, so we were hoping to wait on footage until they are anything like what we think of as normal. Right now the markets here are truly bare bones essentials, and the social element is compromised. However we are thankful they remain open.
