WOW just got hold of your video and Glengarry Cheese you are referring to is 20 minutes from me and I've actually taken a class from them back in the time, small world.
We got it on Amazon we love it. First one of the same brand we used for 8 years for cheese making, candy making and boiling maple syrup before it got dropped in the water and gave up the ghost. This one we have had for 2 years now and it’s still going strong
ive got dairy goats been making soft cheese for a while, just started with some hard kinds can i ask what brand of wax you use and put on with your hand? will be waiting for next
it is simply called cheese wax coating. I do show a couple shots of it up close, you could pause the video to have a closer look. Here’s the link to it. glengarrycheesemaking.on.ca/products/csk-cheese-coating-ntt-clear-500g?_pos=1&_sid=f35c9d604&_ss=r
The wax that we use is not a "true" wax it is a mould inhibitor wax, then we also vacuum seal and put it in the fridge. We also found the "hard wax" a pain in the bottom.
One of my favorite videos!! So full of great information, thank you!!
We love it to! Such a versatile cheese. Have fun making your own.

lol they are fantastic! We’ve spent lots of time on the phone with them over the last 10+ years.
Can you tell me where you got that thermometer. I like digital and the pampered chef one doesn’t clip on the pot. I like yours!!!

I failed with wax. I use a vacuum sealer and leave it in the fridge to age.
