    Ingredients
    Yolk cream
    2 whole eggs
    Icing sugar
    250g butter
    Beat the eggs with sugar in a water bath or over steam into a thick foam. As soon as it starts to form "snowdrifts" (after about 10 minutes), set aside and gradually whisk the cold butter, cut into shavings, using a whisk. The result will be a very smooth and soft butter cream that will stay in the cold without problems for up to a month.
