I often hear people, including authors say, that you don't need to read interconnected standalones in order. Yes, you do! Gosh darn it! The whole of it is so much better if you read the books in order. This is a hill I will die on. My number one pick for you is Quiet Beautiful Things by Samantha Christy. I cry easily, over pretty much anything but this one had me crying a couple of buckets at least. Another couple recs are Archer's Voice by Mia Sheridan and All Rhodes Lead Here by Mariana Zapata
The High Mountain Court has fake dating and if I remember correctly also single bed moment. It’s a fantasy that I really enjoyed! Also A Curious Beginning (A Veronica Speedwell Mystery) is also fake dating/marriage one bed trope, I enjoyed it way more than I thought I would. I loved the witty banter between the MMC and FMC!
So glad you loved all the books! I also recommend Eleanor & Grey by Brittainy Cherry as it’s a single dad and nanny romance. I also loved Ask Me Why by Harloe Rae. It’s another single dad book. It is an indie book so most likely it’s not in book stores.

I loved You With A View by Jessica Joyce, Maybe Next Time by Cesca Major and The One That Got Away by Charlotte Rixon would recommend all these three.

I'm interested in Magnolia Parks and maybe the Brutal Prince series, but I always just gravitate back to fanro.

She writes heavy topics with a hint of romance. Read ‘The Women’ not so long ago. It’s about Nurses in the Vietnam war. Normally not my genre because it’s Historical fiction but i truelly believe it would be right up your alley. I loved loved her writing. - Mariana Zapata (queen of slowburn) ‘All roads lead here’ Grumpy single dad and she has trauma getting over her mom’s death. For cozy romance small town ‘gilmore girls’vibes read Laurie Gilmore books. ‘Pumpkin spice cafe etc.
I am not sure any romances will compare to those three. They are the best. I also highly recommend The Cheat Sheet and the one that comes after that - by Sarah Adams. And Life's Too Short by good ole' Abby!
