Yes this came right on time. My husband and I have been trying to stay away from meat a little. Fasting . We have 7 more days left. I had some organic oatmeal this morning with honey applesauce nut butter and honey and cinnamon and tea ☕️ to drink. For lunch I’ve been having toast with guacamole or tortilla with beans. Dinner has definitely been pasta with sauce.

I've done a veggie alfredo for years. Usually using a bag of frozen broccoli cauliflower carrot mix with some corn since my kiddos like it that way. You can use black beans, peppers and corn with cumin and chili powder or fajita seasoning to make a southwest inspired meat free version
I love how simple the Asian noodle recipe is; definitely would like to see more 1-2 serving recipes And I never make Asian or Indian food so those would be great. It’s great that you explained your slow cooker. Idk why but people calling any pressure cooker an InstaPot is a real pet peeve for me! Crazy, I know!

That noodle dish sounds amazing. I will probably add broccoli, bell peppers and mushrooms and a few scrambled eggs to the green beans and carrots that's how I make my fried rice but am so excited to try it with spaghetti!

Just a heads up - if you’re ever serving true vegetarians, the regular jiffy cornbread mix is NOT veggie friendly - it contains animal fat. So meatless yes, veggie - NO. They actually make a vegetarian one that is labeled at the top of the box in red. Still super cheap and delicious!
Yes. For the meals for 1 or 2. Im always looking for something for just myself. Especially for lunch. I often end up opening a can of soup and crackers or beans and cheese with chips for lunch. If I dont have any leftovers from dinner.

An idea that i do when making cornbread,is i make mini muffin sized cornmeal muffins. They work great for a breakfast grab&go with the leftovers the next morning.

Have you ever been to famous Dave's BBQ? I cracked the code for their cornbread when I was pregnant with my now 14 yr old!!! 1 yellow cake mix, and 2 of those corn muffins, add all the eggs and liquids etc for all 3 boxes(it does make alot...but freezes well) and Bakr them per the cupcake baking directions... I make them in cupcakes and freeze extras...perfect for a gathering or to freeze(makes like 30ish muffins)

Lol but I was beyond obsessed with their cornmuffins pregnant and at like 2.00 a muffin it got really expensive! I make them still for every chili cook-off or potluck etc...since it's low cost and makes alot, just line a basket with a kitchen towel and fill er up!
I think I will try this, too. I've done the 1:1 ratio per Jiffy's recipe on their site and the ratio just seemed off. This ratio is probably a better fit for my taste.
I love the 1 person meals as I live alone. And I love all the meals with oriental spices/ teriyaki. I find it makes it a little difficult sometimes making meals for just one person. I'll cook a meal for 2 and spilt it for 2 meals usually. I really like using whole ingredients.
If you make another Asian dish that calls for sesame oil, consider trying toasted sesame oil! It has a TON of flavor, it's so nutty and delicious. A little goes a long way! You can usually find it with the other Asian foods at any grocery store.
Yayyy! I am so jazzed to have a meal for one on here. As a person who lives alone, I am constantly halving recipes and freezing portions of meals, etc just to avoid eating the same thing all week. Looking forward to seeing more options like this!

Great video and ideas. I was cringing watching you with cutting the tomatoes as I have had the same issue with “sawing” to cut into the skin. I got smart, flipped the tomato over and cut into the meat of the fruit first then through the skin - especially when I don’t have a serrated knife to make the task easier. 😉

That enchilada soup looks like a great hearty lunch that’s not too heavy. My husband likes to have meatless lunches so that he isn’t heavy or sleepy and that will be great!

I really liked this approach. All of my kids are grown and always coming and going. We make a lot of meals together, but I often find myself on my own for meals. I look forward to more videos like this! I agree, too, that meatless meals are great for lunch preps.
I think the noodle dish at the end with my favourite of all this video, but I really love Asian flavours those dishes often. I was all set to make something similar for dinner tonight for myself and I just got a text from a friend turns out we’re going out for dinner LOL. Which is, if I’m being honest, is really my favourite thing to make for dinner. But I can’t wait to try the noodle dish.
Yes do more of the Asian inspired dishes we love honey chicken and sweet n sour chicken and we tried chicken lol mein in the instant pot very good better the next day . Yum yum fun video.

Is that plant based butter as good as regular butter & is there any weird taste? I have been wanting to try some. Does the plant based food upset anyones stomach? I tried plant based shredded cheese one time and I think it upset my tummy but I’m not sure..I’ll have to try it again to see. But I would love to try the butter. I wish my family would eat vegetarian! My husband is very much a meat and potatoes man! 😂
Meatless Monday has been a constant in my house for as long as I can remember. I actually try to do a couple of days but always on Monday. They all looked good 👍!

Aldi has some GREAT jar Indian sauces and its really just dump and go! Add rice or pasta...or chunks of veggies, or meats... to easy!

Not sure. If you try it, I would stir it in with the rest of the oats at the end, because it will liquify in the blender.

That untoasted sesame oil is a good choice for people who want a nice sesame flavour but find dark sesame oil a little too strong-tasting.

Instead of Everything but the Elote seasoning, you could use a little Tajin, just watch the salt
