Yes it minimizes the water content and gives it a nice flavor. When the charcoal grill is hot I’ll put some items on there, now that really brings a special flavor and taste
I usually only used to do that for my ayamase or Ofada stew but never for regular stews or jollof rice. I tried it after watching one of my our videos and my my! It was yummy! I like it because I skip parboiling the peppers after blending lol.
These is actually how I process my homemade tomato paste. Rather than boil down the ingredients and cook I always roast them, blend and then dry out in the sun or in the oven. To the above I add carrot and beetroot as well and so my tomato paste is Smokey

@@pascalinechimechefunamsorry dear but the other method I can think of won’t work for this which is roasting in a pan with salt at the base which I what I use for roasting nuts but being the peppers have liquid and you also need the liquid it won’t work for that.

This is just a different way of roasting them. You can roast them over fire On the BBQ Anyway with fire as long as they are tender Charred and not burnt And soft.

Add chicken stock or broth or water that still needs to summer for a while

Maybe ur red bell pepper are not as much as the tomatoes u add
180°? That’s not hot enough. Mine were hardly even warm. Raising temp to 400°.
The 180 is in Celsius not Fahrenheit
