Lemon posset meringue pie (full recipe) by Thuy Hoang, MasterChef 2023 Quarter Finalist

MasterChef 2023 UK Quarter Finalist, Thuy Hoang makes a lemon posset meringue pie. This is wonderfully zingy lemon posset on a lovely buttery base topped with meringue that is crisp on the outside and marshmellowy underneath. It is a definite winner!
After my posset disaster in the Quarter Final of BBC MasterChef, I created this recipe to redeem myself. I dedicate this recipe to the three wonderful judges that day: Nisha Parmar, Tom Rhodes and Irini Tzortzoglou.
