Good effort, first time I laid them I did them like you. Second time I laid them on mortar. I got a superior job on mortar. Pavers are not all the same size and thickness. Mortar allows for this difference. There's a video on the bunnings website you should check out.

How much ap20 did you use for the area, or is there a certain thickness that you do?
We used two cubic metres. I’m sure there’s a “thickness” you should do but we just made sure it had a decent footing
