Love your videos! Originally I was only interested in meadmaking but you guys have really opened my eyes to winemaking as well, once I realized how uncomplicated it can be made. Made the sweet red wine in the juice container using bread yeast (Kronjäst, the swedish brand), and that wine is long gone (because I drank it all!). Now I've got a second batch of wine fermenting, same recipe but with 71-B (cause I am curious to see how that turns out). So thank you for the videos, the recipes and all the laughs and smiles you bring me.
Might be able to put my Airlock back in the 5 gallon fermenter later today or tonight . The Blow-off tube has slowed down to only 3 chugs a second , instead of a steady Boil . And that through a hose 3/8 ID. By 9/16 OD . It filled up a 1 gallon catch jar with foam , and ran over , now it's filled up another gallon 1/2 way . IT HAPPENS . On closer examination , the Airlock has 8 small pin holes around the outside edge of the snap on cap . HAPPY BREWING . 🤠

Not the sale as blackcurrants but I think it would be awesome. I’d add them to the blackberries I foraged this year: I’m falling short of them for a recipe I found.
Thanks to your channel I just bought 2 Mead kits that I am going to try out, I don't like kits but i seriously could not find honey online for less than $10 a lb and the kits came with 3lb honey for $20-$23. I cannot wait to try out mead for the first time with my first attempt :) Love watching your channel enjoy all of the informative content.

So I took on a pumpkin spice mead. I wanted to suggest it for you two to try. I made one mistake but I think its salvageable. I used 2 cans of 100 percent pumpkin puree. I suggest only using one (let's just say I had to use a blow off tube) then I added 8 all spice berries, 2 cloves, cinnamon stick, 3 1 inch by 1/2 inch pieces of ginger, vanilla bean split, 2 nutmeg nuts split in half, 3lbs of wildflower honey, the rest water and Lanvin RC 212. Tell me what you think! Hope you two are having a great day! Hopefully I can get a critical success on this recipe.
I bought some syringes and to put the sample in myself I just hold the syringe above so it's pointing straight down into the cylinder. Yes, there's a chance of knocking it over, but it's greatly reduced. Just pay attention and you're fine.
SWLA isn't just a wine, it's a mentality and a movement! We can have our SWLA wine, with SWLA appetizers, then a SWLA soup, and finish it all off with SWLA cookies! I haven't made a wine but with some exceptions, most of my cider is SWHLA :)
The 2 Blow-off jars poured together made 1 gallon of liquid . Now that thing has me ( curious ) I don't need it . I have 3 , 5 gallon batches . 2 made , 1 making . I've always used a 3 pack of yeast for 5 gallons with no problem . But I've seen a whole pack of yeast per gallon . Sooo , 5 gallon 5 packs . Wrong , anyway back to the story . I put sugar in the Blow off ,it would foam out , so what , it was sitting in a stock pot to catch the over flow . When everything settled down , sit the jug in the sink, pour the liquid in the stock pot back in the jug . Don't want to waste time with this , but curious . Tighten the cap down , reached for an Ice Pick , by the time I poked a pin 📌📍 hole in the lid , it Hissed a few seconds . I'm fixing to stick it in the Block Building . Around Christmas time I'll check it out . Take it to Game 🎯 Night , hand it to someone and say , Merry Christmas . I'm really not that Bad . But Friday , I'll take that gallon I back sweeten , with a Bag of Oysters . You break out a bag of Oysters with free wine 🍷 you don't have to worry about how to get rid of stuff . There's nothing wrong with it , I'm keeping the rest of the 5 gallon batch . It's at 1.010 , back sweeten went to 1.014 . Not much difference , but enough for me . Now you get a bag of Oysters and free wine around a gang of Construction Workers . They'll drink that up like it was Soda Pop . They'll be happy , and I will too .
I'll admit the wispys don't worry me. Right now I'm finishing the very last of a ginger lemon mead. The bottle had a little bit of sediment in the bottom. Still tastes good to me.

I plan to back sweeten with honey and enhance flavours with dried berries My question is can I add more water to add volume and reduce head space? I know this will likely cause it to referment. But other then that and being careful not to oxidise the extra fluids if there anything I should know or be careful of? 🤔 Thanks in advance 😊 Love the channel
Okay, headspace is overly emphasized. As long as you're more than 2/3 full should be just fine. If you're adding honey and more fruit at that time, you should be alright, just keep in mind you still need to keep that fruit wet, so push it down every day. Adding water will dilute your abv and cause refermentation which makes backsweetening kind of pointless, since the idea is a sweeter brew, so you would need to either surpass the tolerance of your yeast or kill them off. Do you aerate your red wines before you drink them? It used to be the advice to decant a red wine several hours before drinking which had the effect of bringing the wine to room temperature and somewhat aerating them. Is that still necessary>

Question about the swirl: You call the CO2 a waste product of the yeast. Is there any chance that yeast waste products lend something to improve the quality of the finished product? Or is this old news that I just haven't yet learned?
Co2 can be useful for carbonation, other than that it adds bitter flavors. That’s another reason to degas which we either do manually or let time handle it for us before bottling.
Really enjoyed the bottom up video when racking into the pitcher and bottles. Interesting point of view. Also, a little sad that Derika didn't jump in with a pee joke when Briam stated the front of his pants were a little wet. I realize you are trying to keep it g rated, but still a missed opportunity.
Why have I never seen you guys use a refractometer? I have a $18 one from amazon, it only needs like 3 drops of liquid, and it's quite accurate. Lots less to clean.
@@CitySteadingBrews Missed that one. Just watched it. Yeah, having to do calculations for FG and converting to Brix and applying a wort correction factor can be a bit of a pain. Frankly I do refractometer for OG because I don't want to drink the unfermented brew, and the less I have to sanitize the better. I also usually ferment in a vessel that has a spigot so I don't have to open the container or sanitize a thief/pipette/syringe to take a reading. I also take refractometer readings towards the end because they are so easy to grab, and all you are really looking for is for it to stop changing, it doesn't really matter if it's accurate, just consistent. I will often take a hydrometer reading for FG because I intend to drink the sample anyway and no math.

What alcohol percent did you get from kronjäst? I'm curious to try

I have always put in some yeast nutrient and enzyme after a week or two, then it has always gone completely dry.

That d47 is a tortoise, not a hare, in my experience.
I don’t worry about the speed so much. But D47 seems picky in our environment at times.

Adding sugar to a stall will only make it worse, but what happened is the sugar released co2 from the liquid.
