Rachel's obsession with religion was the one part of the game/anime that really confused me. Why was the existence of God so important to her in relation to her current situation?
Someday, when she was on her floor, she read the bible that Gray has left. After that, she realized she's a sinner and she needs someone (god) to forgive her, she couldn't forgive "herself", she needed someone else to do this.
I think it’s also trauma related too because when you’re stuck in a situation where nobody needs you and you find out god could possibly be a being that could need you you’ll basically beg for anything just to be needed or useful.
She wanted someone who could forgive her, she wanted someone she could believe on, that someone came tobe Zack but before that she didn't have a good recognition with what was good or bad but the Bible that was left on the floor, that single Bible told her she was trully "unforgivable". She didn't want to believe that but she was shaken by the thought of that and came to follow "God" for her to be forgiven of her sins. (Sorry for the long text)
The other commenters explained well, but I just gotta add one thing. That is the reason why Rachel is a sacrifice. Not because she freaked out. As we know, Gray made this as a social experiment to figure out why people held on so tightly to their faith in god, despite there being proof that god is in fact, not real. He wanted to see just how much they would hold onto their faith being put through trials by the "angels" those with desires not seen as human, yet were human and had no problem taking the life of another human being.
