1st question explanation: When baking soda (NaHCO3) is heated while baking bread. This produces CO2 which gives the cake puffiness. 2NaHCO3---> Na2CO3 + H2O + CO2. Now NaOH will make the cake alkaline and bitter taste. So Tartaric acid will reacts to it to form Sodium Taratarate which is almost neutral (mild basic salt). Only using NaHCO3 for baking will not work. 2nd question Explanation: Ca has configuration of [ Ar] 4s². When it loosed 2 e-, then only it will form Ca²+ right? So, its Argon. Simple! See periodic table just!
