    I have a Tsukasa Hinoura Santoku Rainbow in my set. I cant stop looking at it. It pops different depending on the light...Its like its alive.The copper changing colour in places as well. Love it.
    Just got back from Amsterdam and popped into see the boys at Karasu. I picked up a Paring 90 by Matsumi HInoura.
    They were so nice and knowledgable. I said I'd seen them on one of your videos.
    Great Content....Keep up the good work

      That makes us knife brothers, having the same Santoku from Tsukasa san. Hinoura's Rainbow Damascus is out of this world!
      So nice you dropped by at Karasu and yes, they are very friendly, knowledgable guys. And good you brought a 'souvenir' from Amsterdam, enjoy your pairing knife!
      Thanks for watching my videos and the kind words. Comments like yours sure motivate me to continue creating knife related content. 🙏🏾

    I have a Takeshi Saji Rainbow Damascus petty 150mm and love the look of it 😍🤗

      They sure are beautiful to look at. Does it also have a rather thick spine, workhorse blade geometry and grind though?

      @@chefknivesenthusiast yes it does have a thick spine and some weight to it I think they all do?? I have another Takeshi Saji a 180mm bunka black damascus and it’s the same thick spine and weighty they’re my art work knives, however I still use them.

      You're welcome my man! 😉 You're collection is massive enough to deserve a shout out. And if it wasn't for you, I'd probably never heard of the Master Masui Colored Damascus choppie choppers. 🤷🏾‍♂️

    Where can you find the Tsukasa Hinoura colored Damascus online, that’s my favorite from this video.

      Hahaha, yeah...it was a funny gift from a friend that just had to be worn in a knife video. I guess I still have to make footage of ne wearing that thing while cutting/slicing/chopping eggplant.

    Bruh…. The eggplant pajamas ur killing bro Fn love you man! 🍆 I’ve always been Nigara & Kurosaki loyal 💯 but from so much recommendations I just picked up a Saji & omg outta the box sharpness fit & finish just blown away from this old man’s work

      Btw local dealer my way in NY has Rainbow Damascus by Saji in stock & the pattern is so much cleaner nowadays high polish smooth AF reminiscent of ur Tsukasa Hinoura there with the clarity of detail just doesn’t have raindrop pattern more of wave pattern….gonna pickup a bunka actually after I decide on what custom handle…. Stay sharp bro

    • @SalVitroNY
      @SalVitroNY ปีที่แล้ว +1

      Oh & btw I love ur Saji bunka it looks tough AF! The one I’m buying is has more saturated color & blade has high mirror polish, definitely pops, a little bit sexier than yours but then again I’d want both bunkas cause urs just looks tough more masculine

    Hatsukokoro hayabusa rainbow damascus, have you came across this?

    • @chefknivesenthusiast
      @chefknivesenthusiast  11 หลายเดือนก่อน

      Yes. We sell them at Meesterslijpers as well. They're neat and accessible, buy not comparable to hand forged rainbow damascus knives (they are roll forged and stamped blades from the Takefu Steel Factory).

      @@chefknivesenthusiast how about Hatsukokoro Irodori. Is that handforged? But I see stocks for that knife is pretty low

    • @chefknivesenthusiast
      @chefknivesenthusiast  10 หลายเดือนก่อน +1

      @@skyboy123454321 Yeah, the Hatsukokoro Irodori line of knives are hand forged and not widely and readily available. Obviously hand forged knives are made in lower quantity than their factory made counterparts. You always have to be a little bit lucky to find the knife that you want in stock at the right time and place.

    I can't fathom why someone would not be into these rainbow damascus. What's not to like about it? Do the different metals compromise the hardness of the steel?

    • @chefknivesenthusiast
      @chefknivesenthusiast  2 ปีที่แล้ว

      I'm not an expert in metallurgy, but I do now that brass, copper and whatever steel is used do have different melting points. I have these knives for years now and I've never experienced and problems with them when it comes to heat treat, edge retention is generally good, they sharpen pretty easily, they get nice and sharp edges. So I don't know how they do it exactly, but they're doing it right!
      I just know a few people that are just more into the rugged type of looking knives, with a Kurouchi finish and stuff. They find these Rainbow/Colored Damascus blades less attractive. And since it has no function other than the aesthetics, they're not interested in these flashy looking knives. It's just a matter of taste. I guess they are more form follows function type of people. To each their own.

      It’s just a different variety of cladding to the outside of the core steel. The core steel is unaffected.
