She was not truly frozen, her internal organs were most certainly still working, even if at a severely decreased rate. There have been a lot of scientific experiments trying to freeze animals cryogenically, but it does not work for larger animals such as humans.

This was probably an accidental cryogenic. The woman froze so quickly her body didnt shut down, but stay in place. This caused her body to just freeze in time, therefore no damage. Its still miraculous, since the conditios required are insane

Or perhaps vasodilation. I've heard around that she drank alchohol sometime before the incident, which might have helped. Not everything is superhuman.
She had been drink driving, which contributed to her losing control of her car. Ironically the same alcohol prevented organs from freezing. Even the frostbite on her toes faded.
