Ghanaian Beans Stew Recipe

  • In this video, I will show you how I make Ghanaian beans stew sometimes also referred to as red red. It is fairly simple to make and it does not require to allot of cooking time

    Ingredients:
    2 Onions
    *Salt
    *1 TSP Curry powder
    * 1 TSP Chili powder
    1 or 1/2 Scotch bonnet
    1 Magi cube
    3/4 Cup Red palm oil
    1 Canned tomatoes
    Salted fish
    2 Cups Cooked black eyed beans = 1 Cup dried beans
    *Optional
    Instructions:
    1. Start by warming the red palm oil. When the oil is hot add the onions. Cook the onions for about 2 - 3 minutes over a medium fire
    2. Add the salted fish, this is optional. Cook the onions and fish for about 3 to 5 minutes
    3. Puree the tomatoes together with the scotch bonnet. Add it to the palm oil.
    4. Add the spices and let it cook for about 6 -7 minutes.
    5. Add the cooked and strained beans. If you want it to have a more mushier texture you can use your spoon to mash the beans a bit.

    Nice recipes. But wow how caloric dense is this recipe. Just in the oil alone there is about 3000 calories.

    Hey sis the recipe said 1 can of tomatoe sauce but it looks like you used fresh tomatoes and pepper...did u use both fresh and powder pepper and fresh tomato and canned? I love red red but this will be my first time trying

      In Amma's Kitchen As far as I am concerned it was just right. Or you could add less oil and more pig fat. Haha. Fat and oil is where the flavor is. If you want less oil...eat smaller portions! So THERE! Lol. Mine turned out great. As a white guy from the South, I have always loved Soul Food. When I was a kid on the farm, if course we just called it "food". Now I find out I have just been eating African food all my life. Just didn't know it. I am happy I subscribed here, Amma.

    any suggestions for making this with a healthier oil? Palm oil is delish but its high in saturated fat.

      That depends on what you consider a healthier oil 🙂 But some alternetives are; canola oil, peanut oil, avocado oil or vegetable oils.

      I used salted cod, but traditionally it is made with salted tilapia (Kobi)

      Palm oil gives it some extra flavour but yes, you can definitely use another type of oil.
