Bro my s23 ultra when I press volume down and power button at the same time it opens power off menu with restart and 2 other options how do I set it to take screenshots instead of opening the power off menu

Swipe the screen by touching it with the side of your hand from the edge either right to left or left to right. (You have to physically touch the screen while performing the swipe action)
