Good recipe, but you don't need to boil the udon separately. You can just add them straight to your frying pan/wok and cook them for a few minutes there. Saves on washing another pot :)

i also like adding shrimps in this type of oyster sauce stir fry noodles, and i also use mung bean noodles instead of udon, cuz they absorb alot of sauce it is my favorite wok recipe

This is actually somewhat similar in some of the aspects to a dish we call ''Čína'' that we have in Czech Republic, which would be translated to ''China'' (Nothing chinese about it honestly Xd). It's a very quick, simple dish one can prepare in many different ways. The sauce is a bit different, being consisted of soya sauce, worcester sauce, an egg, a spoon of corn/potato starch, pepper and salt. It can be prepared in many different ways depending on what vegetables alongside onions you use, for example I like using cabbage, corn, carrots, tomatoes, I also like having peanuts, chia seeds, pumpkin seeds, and other similar ingredients in it. Another difference is that it doesn't matter if you use pasta, rice, or even fries/chips, anything is good with it. The whole cooking procedure is very similar, however it is usually better, if you let the meat marinate a bit (It's not a requirement though), also you can use other meat, like turkey breast. 1) Cook the meat just enough for it to catch colour. 2) Put vegetables in the pan and add a bit of water. 3) Pour the sauce and if needed, add a bit of water again. 4) Put the side dish in the pan and If you want to make it more special, put some seeds or nuts, then cook it slowly just to mix everything properly.

At the Chinese bar they have udon noodles, they're very good, I started looking for udon noodles to buy to prepare at home........cost is outrageous, not as good as spaghetti noodles first cooked in water just to get them soft, then in a soup just enough to cover noodles in a wok and soy sauce added, cook it down to just noodles, add other ingredients (mine was diced bacon onion bell pepper) this was also very good, noodle cost of maybe 10cents instead of a couple dollars Broth is better word than soup
This recipe looks awesome man. Its very similar to how I cook, although I have not specifically used bok choy or udon. Ill make sure to buy some next time I get a chance. I love bok choy in takeout dishes, and ive never tried udon but it looks great. Also I used to cut my chicken up around the size that you did for this meal, but these days I generally cut my chicken about 1/5 to 1/10 the size of that, quite small honestly. It also really helps with keeping stir fry mixtures evenly mixed, especially when noodles are involved. I've really come to enjoy this way of cooking my chicken
This came out good. Good stuff Felu. Keep up these high protein low calorie dense food ideas. Perfect if you need that protein with some Asian zing while keeping a meal size portion. (600-900 Kcalories)
You only cook chicken for 1min each side. Then you add noodles+thickening sauce+sauce mix + CHICKEN and cook for only another 30/60 seconds. so in total chicken gets cooked for 3 min - that cant be right - surely it will be undercooked?
You could have 2 servings of these noodles with either mushroom or cauliflower noodles at 125kcals per 200g of those, and they are just as thick albeit softer.
That's a decent suggestion for those who really want to watch their calorie intake, but it can't replace the texture of udon noodles. Sometimes it's just nice to have the real thing 😄
Mushrooms are a nogo for me (it's a texture thing). Would it be okay to just leave them out or is there something else that would be a good substitution?
The mushrooms are mainly to fill your belly as they contain very little nutrients. Now i'm not a chef or anything but i reckon you can toss in any vegetable as a substitute. The goal is to not add too many calories and still give your food lots of volume.
Udon noodles are really good but they are processed carbs which will make your insulin spike up and you will get hungry again fast. Not a problem if it's your fuel for the gym, but if you are just resctricting calories it can be hard to resist cravings afterwards. My best advice would be to do the exact same recipe, but using soba noodles instead. They are more ''filling'' in the long run even tho they have less volume.

Another amazing recipe...been using a similar type sauce in some of my stir frys just added some juice from an orange. Going to have to add udon noodles at some point as I usually do cauliflower rice or shirataki noodles
Little worried a couple of those pieces of chicken didn't ever cook through.. Sitting on top of a noodle mound for s couple minutes at the end may not have done it.. Try and get them all on the bottom of the pan, rather than tossing straight away
