It varies from person to person but we use bamboo juice/shoots to add more flavor and acidity. "Etsü" usually means Bamboo shoot juice. Anyways back to the video, I just had dinner and y'all make me hungry again. 😂 Also, y'all can smoke your own meat if it's too expensive. I used to half cook the meat with salt, smoke them for 1-2 days and put inside the refrigerator. Or Rub the raw meat with Salt and smoke for 3 days. 😊
