    I've been making this kind of fudge for quite a while.
    For Christmas, I sprinkle with crushed candy canes or sub some of the chocolate with Andes Mints. Delish.
    Peanut butter 'fudge' is awesome. Especially when you take a bite of it with a bite of the plain fudge. Like a Reese Cup.

    • @sharonsocoloski5485
      @sharonsocoloski5485 2 ปีที่แล้ว +1

      The Reese's Pieces sounds yummy! When, would you put it in? Does anyone know what size that glass pan is? 8 x 8.or 9 x 9? Or even the Yorks peppermint patties! Just break them up, just like you would with reese's, you would break them up too! Just you don't want them to melt, so, when do you put them in?? I would "assume" at very end, before it sets.

    • @anakelly76512
      @anakelly76512 2 ปีที่แล้ว +5

      @@sharonsocoloski5485
      Yes. You add the Reese's Pieces at the very end.
      I press them into the soft fudge and put it in the fridge to set.
      I sometimes add a little instant coffee granules. 😋
      You can put it in a square baking dish, glass or otherwise.
      What size pan depends on how thin or thick you want your fudge.
      We like them about 1/2" thick.
      We cut them into bite sized squares because it's very rich.
      I love York peppermint patties!
      Mint and chocolate and peanut butter and chocolate are the perfect marriage of flavors, IMO.
      You can top them with salted toasted nuts, peanuts or even toasted sesame seeds.
      Sometimes I sprinkle a little Kosher salt on top.
      The salt really enhances the chocolate while cutting the sweetness.
      I sometimes use dark chocolate instead of milk or semi-sweet.
      I like dried cranberries with dark chocolate.
      There are so many varieties you can make.
      I'm a chocoholic so I could go on and on about it. 🍫

    I make this fudge often, and I found a cool trick. After you make the fudge, put 150 g of milk or 175 g of water in the still fudge coated pot, and heat on medium while stirring. It makes the pot much easier to clean, and you get hot chocolate! For added simplicity and sweetened condensed milk flavour, I pour it in the condensed milk cans.

      @@winstonwolf6791 Idk abt the pod stuff. Isn't found in my country. I once tried making hot chocolate with Hershey's hot chocolate powder and hot water. It tasted floury and awful. I make hot chocolate with cocoa pellets and they are way better. Very smooth. No floury taste. Coco powder works best in cakes. In any other dish, especially liquids, it tastes floury. It's like the powder needs to be baked/cooked in thick form. If it's in liquid, it's not working. A lot of places that serve good hot chocolate never use the powder. Only the pellets.

      I have been wondering about this for a couple weeks, so you can substitute white chocolate chips? It sounds like it works well for you. I’m gonna try that. Also, if you can’t find bitter sweet chocolate, can you use dark chocolate chips? The first time I tried 3/4 dark chocolate chips and an extra 1/4 of milk chocolate. Also, is dipping/baking almond bark work? I live in a small town so a bit limited on options. I hope to hear from someone soon.

      John Kean good advice. I like my set of stainless steel pots and my cast iron/enamel ones the best. I do have vintage copper-looking jelly moulds but they are actually anodised aluminium. I have a vintage aluminium egg poacher but that is the limit, once aluminium is pitted, it becomes hazardous so I don’t use aluminium saucepans or pots. When I was searching for a hotpot, I took a magnet with me to ensure they weren’t fake - fake ones don’t work on induction stoves too. Phew, cooking is complicated. It’s kitchen alchemy.

      I have 2 solid copper pans and they have become carbonized on the inside from burned food. I decided to leave them like that instead of having them tinned. They work like a dream when I use them for anything fried or sautéed. And they were a steal for $3 & $6 for a 6" & an 8" pan respectively at a thrift store overseas. They had NO idea what they were. Bronze handles on both, and the original bronze rivets too holding the handles on the pans. I couldn't believe my luck.

    I always make this at Christmas. You can simplify it, and avoid problems with burnt chocolate by microwaving the milk in a large bowl. Get the milk really hot, and then stir in the chocolate. Let the hot milk melt the chocolate, then add in any extras and stir well. Pour into a prepared pan and continue on as in your demonstration. I’m so glad you showed this recipe because I think it is superior to the old fashioned cocoa and milk or even marshmallow recipes...no crystallization to worry about! I love your channel!
    PS...don’t be tempted to melt the chocolate with the milk, as the microwave will burn chocolate very quickly.

I cleaned everything till it shined, sterilized everything necessary (I have an autoimmune disease and I get very sick very easily, so I have to be cautious and vigilant about what’s being touched in my house) and by then it was 6pm and I was just starting my snacks. I came across this post about a week ago and knew I had to make it. Now, here I am at 9:30ish and I’m just starting my fudge followed by my irresistible pecan pie and Chex mix. I hope to be in bed by 11, but the more recipes I come across, the more things I wanna make! Darn you Preppy Kitchen 😂😉!! I’m gonna gain 10 pounds before breakfast even gets here 😅🤪🙃. Every single Thanksgiving my kids embarrass me and talk about my "chainsaw fudge."
    Yes, a recipe with the candy thermometer. No, I did not know what I was doing.
    No, I did not use parchment paper. It was a disaster.
    You would think all my culinary masterpieces of the last 25 years would be remembered, but no.

  • @christineedwards97

    I like how you take your time to explain things. When people talk a mile a minute I can't retain what they are saying. My mom always made fudge. None of us ever could understand why her fudge never became a solid. We had to use a spoon to eat it. It was still very good. I wanted to make fudge this Christmas for my family like mom did for the Holidays (but I want mine to be a solid) and I couldn't remember all the measurements of ingredients she used. She used marshmallow cream as one of the ingredients. She used sugar, chocolate chips and condensed milk. The fudge you made looked good. I also see that you did not use marshmallow cream. So maybe that was why hers was a liquid. Anyhow I have subscribed to your channel and I'm going to try your fudge. Thank you for the video.

    Love your videos. My mom used to make homemade fudge when I was growing up but she would always cook it In an iron skillet. But the thing about the iron she had to be extremely careful, careful about under stirring and over stirring and taking it out just the right time cause it was so easy to burn. So even though cooking fudge in iron skillet is engraved in my brain, I'm thinking maybe that's not the best idea?
