Choice elimator 2 is not an option in the add ins only eliminator lite. Is that the same ? I did download it but it doesn't seem to have the right steps as you outlined in this video.

Choice eliminator is no longer available, however there is a similar add-on called Form Choice Limiter | Removal | Eliminator that will do the job.

How do you add more than one day? Can you first select a day and then a time slot and have those selected deleted?
