    Mr. Keen before I started the whole beer nerd life I have embraced I would have said that Tuesdays were my least favourite days. But now it's my absolute favourite day of the week. I love to brew German and Belgian beer styles and now we are entering the styles that I am very unsure on how to brew. It's going to be just amazing learning from you

    I agree with Lauren....redo the rauchbier with a more subtle amount of smoked malt (and use beechwood smoked malt). My wife and I went to Bamberg (the home of Rauchbier) a while ago and, even though she's not a beer drinker, that was her favourite and she keeps nagging me to brew one.

  • @dexterne
    @dexterne 2 ปีที่แล้ว

    I brewed a Rauch with 17% cherry smoke malt. I hated it to start with. I gave it a couple months and now I really enjoy it. I know you said .17% is still too much, but if you do muster up the courage to use smoked malt again: go for 10%, and let it sit for a couple months, it might surprise you. BTW, my wife sat in with me for the first time on my latest brew, at least for part of it. To be fair it was a triple decoction dopplebock and even I was getting pretty weary towards the end. Maybe I can convince her to brew an easy one like this APA later. Cheers!

    What a great episode, you could tell she enjoyed the visit to the Brewery! I think my favorite (that I want to try) was the Tropical Stout. As for Rauchbier, you may want to break down and buy some bottles of Schlenkerla's Marzen and Helles. I had a similar experience, our local Biergarten made some rauchbeir, and when I asked for some, they said "why don't you try a sample first". Needless to say, I didn't order the full glass. Since then, (i.e. drinking some from Germany) rauchbier is one of my favorites.

    Martin, I pay particular attention to the equipment and recipes you use in making the different beers. The Clawhammer kettle and basket. Is there much difference, in function, than the BIAB process. I recognize that the Clawhammer system you are using is electric? But heat applied to water and grain is the same. You are just using a basket instead of a bag. I am trying to decide which route to go and really do not want to spend money unnecessarily. At least initially. Thanks. I throughly enjoy all of your videos and anxiously await each one.

    • @TheHomebrewChallenge
      @TheHomebrewChallenge  4 ปีที่แล้ว

      Yes mixing up that smoke bomb I made with something a little more palatable would have been a good idea. Aging beers for 2 months would be good if I was more organized in brewing them way in advance of their YT publish date :)

    Do you add boiled water to your wort afterwards (off camera) or am I just imagining that there are not 5-6.5 gallons in your pot when you do your mash and wort? Great content as always mate. Finally drank my first brew a week ago (IPA) it came out great, I was very nervous I had screwed something along the way, beginner's fears I guess.

    I'm a newcomer to homebrew so be kind to me :)
    I notice that you altered the PH before adding the grain. Can you tell me why you did this? I was under the impression that you alter the PH after mash as the grain will naturally change the chemistry?

    • @Austographer
      @Austographer 4 ปีที่แล้ว

      Software can be used to predict mash pH. For those of use without a pH meter adjusting before or after adding the grain makes no difference. We just trust the software to get it right.

    • @ubermensch3000
      @ubermensch3000 4 ปีที่แล้ว

      He's using the Clawhammer supply all in one. They are really good but can be pricey and (for me at least) difficult to get as I'm outside the US. A lot of the all in ones work on similar principles; it's good to be enthusiastic but it's a big investment which really just streamlines your process rather than dramatically changing the final beer. I use the brewzilla. In the US I believe the anvil foundry is one of the best budget options available.

      @@ubermensch3000 where are you from? Ive been looking for something just like the clawhammer (maybe a bit cheaper ;) ) but for europe. So far i have not realy been sucessfull

    • @ubermensch3000
      @ubermensch3000 4 ปีที่แล้ว

      @@asdf-y2c yeah I live in UK and had to order the robobrew/brewzilla in advance as limited supply, its a very good system and available all over the place and is very competitively priced. Best bet if you are brand new would be getting in touch with a homebrew store if there is one near you and finding out what is available. For 'Brew in a Bag' (BIAB) which I did for the last 5 years before upgrading to an all in one, I think you could do a lot worse than just sourcing a huge pot (say 35L) with a tap on the bottom and starting from there. Some shops (there are a few in the UK) sell electric pots with the heating element installed if you are worried about how to boil 20-23L in a kitchen.

    • @asdf-y2c
      @asdf-y2c 4 ปีที่แล้ว

      @@ubermensch3000 thanks a lot. Yeah ive been brewing 5l batches in a bag so far and want to upgrade to 10l. I will have a look at your recomendations

    • @ubermensch3000
      @ubermensch3000 4 ปีที่แล้ว

      @@asdf-y2c good luck with everything! My old method was fairly convoluted but worked very well on a stove top. With a bag and mashing about 3.5kg of grain in 10L of water you could easily hit a very decent OG in 10L (topping off with cold water at the end into the fermenter to make the full volume). Some of these systems have a bit of dead space in the bottom so they work best doing upwards of 12L batches, I'm thinking of trying some small batch stuff too but I think for 10L doing it on the stove top is still very manageable. You could also check out the apartment brewer on youtube for info on how to do large batches in a smaller space, and David heath on youtube also has great videos comparing and reviewing all in one systems. Happy brewing :)
