  • Eggs with Radish leaves
    Do not throw out the radish leaves!
    Instead of discarding these delicious leaves cook an appetising meal using the greens. These mildly peppery leaves are flavorful and quite delicious when sauted with onions cooked with seasoned eggs and scrabbled.
    The radish leaves withers very quickly, therefore, best to separate from the radish bulbs which last longer and use the greens while still fresh.
    Here’s a quick and easy recipe.
    Ingredients
    2 bunches of radish leaves
    1 Serrano
    1 clove garlic
    1/2 onion
    3 sprigs of green onions
    Salt as preferred
    1 egg
    1 1/3 cup egg whites
    Seasonings (as per preference)
    1/4 tsp black pepper
    1/4 tsp paprika
    1 tbsp Oil
    Method
    In a large skillet of semi hot oil, add chopped garlic and chilli
    Then add onions, cook till translucent
    Add salt, pepper and paprika , stir
    Add green onions, give a stir
    Then add in washed and chopped radish leaves. Cover and cook for 3-4 minutes.
    Crack 1 whole egg into the egg whites. Season it lightly with salt, pepper and paprika
    Push the wilted greens to the perimeter and make a well
    Add a dollop of butter or oil
    Then add in whisked, seasoned eggs.
    Fold and stir till it is well combined and eggs are cooked
    Enjoy with any bread, tortilla or roti!
