This is really where the Romulan ship design and doctrines shine. With these raids they should be able to tie down a disproportionately large amount of Dominion fleet assets.
One thing that I never could figure out about the Dominion War was how the Cardassian fleet could suddenly hold their own against Allied vessels. Before the outbreak of the war, the Klingons had the Cardassian Union on the back foot the entire time. And when the Cardassians were first introduced in TNG, they were shown to be about 50 to 60 years behind Starfleet, technologically. Even with the Dominion vessels forming the bulk of the opposing fleets with Cardassian vessels as support ships, I would have thought that the Cardassian casualties would be staggeringly high. Even more so than was portrayed during the story arc in DS9. Their Hutet dreadnought was a true beast, but otherwise their warships always seemed very underwhelming, to me. (Even though I do like Cardassian aesthetics.)
I mean, here the casualties are clearly put on display. . The Cardies lost 7 entire fleets because of Operation Return alone, and by this month theres only 12 cardassian fleets left out of the 24 in the entire war (not counting the joint orders). And usually, whenever the Cardassians went on the offensive, they would attack with either multiple fleets or with support from their Dominion allies. Just re-watch the Siege of Vulcan. Two entire Galor lines get pulverized in the opening shots of the Battle of Nibia, and the two behind them also take heavy casualties. And then later during the Kalandra Offensive, the Cardassians, even when they have the 3 to 1 numbers advantage, still take considerable casualties to K'Chang.
I always saw that as the Dominion giving weapon, armor, and shielding technology to bolster Cardassion ships. Not full on technologies, but improvements on what the Cardassians already had.
Long story short: Cardassian ships had been refit across the board by the Dominion. Background: I think 50-60 years is a little much, more like 30 years but it manifests in different ways. The Cardassians are a perfect example of a smaller power trying to overreach: They have the ability to design great weapons, but lack the resources to build them en masse and have to take shortcuts. They can't universally equip ships to the newest standard, so they have variations of the same class of ship. They can only invest in one system at the expense of another. The Cardassians had advanced weapons prior to the War, but probably had issues with weaker reactors, miniaturization and mass production of complicated components. The Dreadnaught autonomous missile was an example of what the Cardassians *could and could not do* prior to the War: Advanced weapons and shields undercut by poor AI, being cheap with some key systems and their inability to build many of them. One assumes the Dominion fixed these issues and much more. By the time the War started Cardassian ships were all of a sudden much more effective. The Dominion victories were not possible without the Cardassians able to hold their own to an extent. We see examples of improved combat effectiveness. In Operation Return, Galors are easily killing Fed fighters with secondary batteries where they had struggled against the Maquis. They were also dealing some damage to Starfleet vessels in the background (Miranda Class Sitak's saucer is badly holed by a Galor before the JH battlecruiser finishes it off). The Orbital Weapons Platforms featured all Cardassian tech and were tearing Alliance capital ships apart with only a few shots. Galor Class cruisers were one-shot killing BoPs midway through the War, and they did the same to the Breen and Jem Hadar in the Battle for Cardassia. Long story short: The Dominion caught Cardassia up to the rest of the Alpha Quadrant powers in a very short period. For all intents and purposes, the Cardassians are far better off after the War than before, even with the destruction. The inherited all the Dominion tech, and a huge and efficient industrial base. Future classes of Cardassian ships will be peer level to Starfleet and the rest.

But, once the War starts, we see highly deadly Galor Class cruisers and the Orbital Weapons Platforms all appear to utilize pre-existing Cardassian tech. My guess is the Dominion solved the issues above which allowed for an across the board refit of all Cardassian warships just prior to the War starting. We also saw the Dominion built up a huge industrial base for them as well and there was likely a partial technology exchange. The Cardassians hit the jackpot when the Dominion left all that stuff after the War (Treaty of Bajor left all of it for the Cardassians on the planets not in ruins) and we can assume they are now caught-up with the Alliance in terms of tech and industry. And they paid a high price for it.

I love these, but part of me feels as you've said you got kinda burnt out, the tail end feels mildly rushed. In fairness, DS9 at the end was kinda rushed though.
For both sides it's a phase of the war where they recite: "God protect us from our stalwart allies, the dunderheads..."

One must remember that the Dominion Intentionally place their base within civilian area in order to cry wolf if they get hit back hard .
