I make pastry with plain all purpose flour.I have never heard of pastry flour. What is it, is it an American thing?
I think it's cake flour.
Pastry flour has a low protein content, which means it has less gluten. Less gluten = puffier & lighter baked goods. Perfect for pastries 😊

The flours in stores is garbage. The ones that bakeries and restaurants use are premium flours .
Incorrect. However, the bakers use the correct flour for what they need, which home bakers may not.
