    How to bake in cooker..? Nd wht's the baking time in cooker..?

      Hello...To bake in cooker follow the below steps..
      1. Fill the base with table salt for about 1/2 inch and place a stand. The salt can be reused.
      2. Remove the gasket (rubber) and whistle from the lid.
      3. Pre heat for 5 mins on med heat with lid on.
      4. Open and place the baking tray immediately and close it.
      5. Usually for cookies it will take about 25-30 mins depending on the thickness and moisture content. Make sure check when about 20 mins up.
      6. After time, open and check. The cookies should be slightly soft. Then it's done and it will cook further fully with the heat within.

    Hi Sir...can I try with coconut sugar instead of jaggery powder? will it affect the texture of the cookie?

      Hi .. i have never used coconut sugar, but if it is equally sweet like jaggery powder you can try the same proportion and alter based on the result.

    Hi Sir.. if I want to make kodo millet or foxtail millet cookies, can I follow this recipe by substituting Ragi flour? will it work

      Hi yes with some change in the flour proportion. Kodo, foxtail and barnyard millets have low gluten content, hence in the same recipe you need to replace 2 tbps millet flour with 2 tbsp wheat flour, everything else remains same. Foxtail (Thinai) will taste very good. Pls try.

      Sir, you mean to say apart from wheat flour which is already in the recipe, we have to add two tablespoon of wheat flourbby removing two tablespoon of millet fliur, right ​@daddyinthekitchenenglish

    instead of whole wheat flour can I use multi grain flour

      Hi, ragi flour has very less gluten content and that is the reason I have used whole wheat flour to bind it. It depends on the gluten content of the multi grain flour you are using. Generally multi grain flour will have lesser gluten content than whole wheat flour. You can definitely try though, it may only be brittle but taste will good. I recommend trying both ways so that you understand the recipe.

      Hi, no, ghee and butter are very different in texture and moisture content. When we use butter it holds the aeriation that comes from the beating, making the cookies very light, which is not the case when you use ghee. Hope this clarifies.

    I tried these
    But they were not cooked from inside....they were getting cooked from upper side good...
    But some not cooked from inside.
    I baked at
    160 degree celcuis 7 mins

      Hi, pls try baking at 180 degrees Celsius for 16-18 mins, it should get baked thoroughly.

      Hi, meaning do you want to replace with Ragi flour? If so ragi flour has very little gluten and hence the cookies will be brittle

    Hi Sir...can you pls give me the measurements in grams? it will be more accurate...as cup differs in ml. in one of ur other video, you have told 6 tablespoon of butter weighs 75 gms of butter. but if we google it, it shows 85 gms of butter. so if you cld give the measurements of all ingredients, it will be very useful...thanks

      Hi Mam, thanks for asking. Weight of butter varies slightly across different brands as the moisture content varies and same holds good for other ingredients like jaggery powder, flour etc. For this recipe it will be 75 gms of butter, 75 gms of jaggery powder, 75 gms of ragi flour, 75 gms of wheat flour and 20 gms of corn flour. Please try out this proportion and I am sure it will come out well as I have baked large batches of the same proportion.
