The cheese that comes already shredded has certain coagulants on it to prevent melting, making it pretty bad for using in purposes like pizza, mac n cheese, etc. Shredding the cheese on your own, although it’ll take a bit more work, makes a world of difference!

The best way to do a pizza without a pizza stone is to put it in for 2/3’s or 3/4’s the cooking time on the pan or tinfoil and then cook it the rest of the way, on the rack without the pan or tinfoil, so that the bottom and center of the pizza catch up to the outside of the crust in crunchiness.
As a former pizza baker, I was both fascinated and horrified. Their dough stretching skills were straight up F tier but they came out looking good in the end.
