1:40 You need to wash the bitter leaves for longer and more throughly for the bitterness to go away. Bitter leaf is not like other vegetables which could be washed once or twice. This one needs longer wash. In Igboland, this is the method we follow before we can use it for Onugbu soup (bitter leaf soup): - Wash throughly by squeezing the leafs against each other until it starts foaming. Pour away the dark green water. Repeat the process several times until the water becomes clear and the foaming stops. - Boil the now finely disintegrated leafs in a pot with water for about 15-20 minutes. Bring down the pot and pour away the water. The leaf is now ready for soup-making. You won't taste any bitterness in it after this. Also, notice that I didn't mention cutting with knife. You don't need to. The leafs disintegrates on its own.

So i heard there's a way you can cook bitter leaves without washing it yet it wont be bitter..the secret is that from the moment you cut off the leaves,till you'll finish cooking, you're not to say a word or talk to anyone.. 2 people have testified that it works, though, I'm yet to try it
