this is exactly why we go to a michelin star restaurant to eat. something that you will never want to try to do at home.
I will, as soon as I can get my hands on a turbot-substitute. And sadly, as I live in Brazil, we don't get celeriac here, so I'll use regular celery instead. Or perhaps some other root vegetables, though of course the taste will be completely different.
