I love that you have one of these. My dad bought ours from his mom after she found it on a used car lot in NJ. We ended up rebuilding our engine (bored it .030 with flat top pistons). She had lots more power after that. We also ended up replacing some of the vacuum lines as we weren't sure if we'd be relocating to a state that requires emissions testing (we lived in Florida at the time). Useful upgrades we did were to change the wheels to 17 in. Toyota Tundra wheels (from the 05 - 07 generation). We added an 1/8 in spacer to make them fit properly and it definitely drove and rode better. We also added a leaf spring to the rear springs (raised the rear about an inch without any load in the back but it'd sit slightly higher than level with a load). The bigger wheels and tires let us cruise comfortably at 70 - 75 right around 3k rpm. Those engines don't like more than 3500 due to that they've only got 4 main bearings (can't remember if they're 2 or 4 bolt mains though). If you're still looking for a bit more power, the distributor and slightly hotter plugs will help, but you'll need to run 93 octane gas. Also, Lucas Heavy Duty oil stabilizer is your friend with that engine (use it every oil change). Those engines hate to be overheated and it'll eat a head gasket as a result. It's been a while since I've had mine (dad moved down to Trinidad before he passed away and took her with him) but you can pick my brain about it if you want.
I've never heard someone get pissed off at referring to it as an 'FJ' to be honest. Though I do hear more folks say that to describe an FJ40. Usually I hear 'FJ60' '60' or 'Land Cruiser' for my FJ60. Careful with the highway speed and revs - I had a 2F blow up on me despite 31s with the 4spd from going ~3k at 70mph. Though mine may've been more of a freak occurrence. With the H55F 5spd and 31s it shouldn't be an issue moving forward.

why did you take out the Chinese Carb for your 2F and change Weber. ? why not buy 2F OEM carburator?
I thought it would help. but the webber gave me more issues. rebuilding the oem is the way to go
