So those random amounts of large veins of ores are Vein Ores. They're really useful for getting large amounts of ores in a single go. They were added I believe when Mojang changed the base ores to be the look they are now, and to make fortune more useful.

why there is so much copper / iron is because there is a very small chance for a "vein" to spawn. if you see tuff and a bunch of iron in the tuff in a cave, keep mining the tuff, more and more iron will appear, and maybe even Raw Iron Blocks! Veins can produce up to 3,000 iron, so keep on a lookout!
The big amount of iron was probably an iron vein structure :] sometimes a LOT of iron spawns in several big clumps like that and its technically a structure, like an amethyst geode or ravine
