Cold weather oyster mushrooms: Pleurotus ostreatus! How to ID and eat oysters + recognize lookalikes

  • In this video, I share a large bloom of cool-weather-loving oyster mushrooms growing on a stump. Pleurotus ostreatus is one of several edible species commonly called oyster mushrooms, and they're resilient and voracious, growing on wood nearly any time of year. During the cooler months of fall and winter, Pleurotus ostreatus colonies can get large and the mushrooms can be quite meaty.
    In addition to identification features, habitat, and tips for finding and eating Pleurotus ostreatus, I discuss two oyster mushroom lookalikes. First are mushrooms in the Lentinellus genus, which are thin, slightly furry, stemless mushrooms that grow in shelves similar to oysters. I also discuss the so-called angel's wing mushroom, Pleurocybella porrigens, which has caused deadly poisonings (though rare).
    I also briefly acknowledge that I am a terrible mushroom cultivator and successfully grew Pleurotus ostreatus. So, this species is a good candidate for beginning cultivators, even if you're kind of lousy at fiddly processes like I am.

      so the one time I tried veiled oyster mushrooms, Pleurotus levis, they were really furry. That species gets these little hairs on it, and it was like chewing on a woolen sock, a little bit. it was stupendously dreadful. i didn't realize it until i was trying to conjure in my imagination what eating a Lentinellus would be like, but the texture is the same...so baby socks!

    I just want to say THANK YOU!!! You’ve helped me so much over the last couple years as I learn to forage, and I don’t know if I’ve ever commented 🤔 Maybe…. But anyway, thank you so much 🥰 You describe and explain so well…. I live just outside of Asheville, and the trail by my house, which is in Pisgah national forest, (the foot of Mt Pisgah) provides me with SO much food! I rarely walk the trail without coming home with edible mushrooms. There must be 20 varieties just on this one single easy hike. I’m blessed! And it’s thanks to you that I know what I’m looking at ☺️ So thank you! 🙌

    These are awesome fungi! :) They grow in Poland too - Love them! You can pick them in winter too - sometimes they grow high on trees. I remember we once took a ladder to the woods in wintertime just to pick some nice oyster mushrooms :) Marinate them in milk for several hours, then dip in egg and batter (bread crumbs + corn starch). Deep fry for a nice crust.

      I plan to, though my kitchen behavior sometimes slips from pg-13 to R without me noticing. But I still intend to do it, and hopefully my dogs won’t interfere too much. They’re very paws on with the cooking scene

    Nice find. I have not found much more than a few pair shaped puffballs the last few times I've hunted but I know there is more out there. This video helps me have hope so perhaps I'll get back out there and keep trying.

      I was relieved that I found this stump. Other than that, I was totally skunked. Like, nary a shroom in sight. Luckily, oysters fruit nearly anytime of year. Even in the darkest, most mushroomless months of the year, I occasionally find them

    Oysters are my fav. My first "in the wild" find, ID & cook. Just got thru with a lil batch I found this last outing. Along with some pear shaped puffballs. Made for a great lil munch.

      I love this specific stump, it’s tucked under some oaks right next to the water. When it’s cold, they frost faster than anything around. But they do their thing a few times a year because they’re snuggled up to the water

      @@annamchugh5381 I've had most of my luck this year near the more "robust" water sources. A lot of my normally wet bottoms and hollers are very dry this year. Lookin forward to more normal rainfall amounts in our area. d:^)

      yes, P. ostreatus is excellent - it grows on practically anything. The first time I did it, I used chipped bamboo and straw, and it worked really well! It's very easy to prep substrate for oysters because they're so robust. good luck! the only other species that's even easier is P. pulmonarius.
