That was a rather ucomfortable scene when he was asked to leave in a very rude fashion...all to stop him seeing how the jelly was put in to the pie.after all he pretty much had seen the whole process up to then....I think I would have been having words with the butcher when filming was over.
We live in Honley, West Yorkshire and within 10 minutes in any direction we have Bolster Moor, J Brindon Addy or Hinchciffes. All three butchery / farms - All three producing gold medal winning pork pies that put these to shame
@@scarlettjones157 You need to travel to Yorkshire then for the best pork pies. I make mine at home from a mix of small diced pork and minced pork; this gives it an exceptional texture. I season the meat with just salt, white pepper and a little sage-no rusk-and my jelly is made by boiling pig's trotters in some stock to provide the gelatine naturally.
I'm from Yorkshire the home of the growler Northern pies are best!! So i thought!! Any how found myself in cannock doing a delivery to a local business and found myself across the road from this establishment and thought I'd pop in and give them a try, The pork pies where first class far better than a Mowbray which are overrated and over peppered for me, I'd would say these where closer to a northern style pie, because if you go south of Nottinghamshire or Derbyshire everybody trys to copy the Mowbray type pie, with very mixed results, but always a lot more expensive than there northern counterparts usually £1.50p up north £2.25 to £2.50p down south!!
I'm a North Derbyshire/South Yorkshire mongrel and I agree with what you say. I now live in the food-desert called Sweden so I have to make my own pork pies (I'm making some right now). I make mine to a traditional Yorkshire recipe, which is far superior to anything made in the Midlands. The locals around here were at first bemused, but now wait in eager anticipation to sample one of my pork pies each time I bake some.
Walls pies are vile, I don't like anything they make anymore and you really can't beat places like this. There's a bakery in Gosforth, Cumbria where the scotch eggs are to die for 😍 I used to get sandwiches and cakes from there when I worked at Sellafield. Everything they sold was handmade and delicious 😋
Well they got that wrong, the 'WHOLE' of the world? I don't think so, they don't know what a Pork pie or scotch egg is in the USA. Avast un-tapped market.
Again ....not a traditional pork pie....this is a commercial shop pie...completely different....and the award was probably paid for in some way . Nothing about this recipe has anything to do with a real pork pie !!!!!
That guy or "chef" or whatever, he was so RUDE, honestly he has no manners, he could at least be more polite and explain the last step is a company secret and that it point well taken, but not react the way he did, unreal he can shove it all the pies up his ass, how can he work for a prestigious company lake that.
Nothing beats a truly great Pork pie, thats for sure.
The way the gelatin is injected is using a smaller or modified version of an air compressor that injects the liquid in there. :)
The jelly is poured into the pie using a small funnel. Plenty of videos on TH-cam that show the process.

salt, pepper, pinch all spice. the Wiltshire way. add some beef extract to the jelly if required.

Salt thyme pepper sage...inject with chicken stock/gelatine....job done!

Rusk? It wouldn’t need it if you diced the pork instead of mincing it.
Pork pies are traditionally made using minced meat, I have infact never seen a pork pie made using diced meat :)
