In my household when we make strawberry shortcake we maserate 1/2 the strawberries in bowl then add sugar and the other half of the berries sliced into the bowl mix it nicely , then chill it for a couple of hours to let the flavors blend, then we scoop some of the berries onto a piece of short cake then put the cream on top of it .

You macerate them in sugar and the juices come out of them and mix with the sugar and make a very sweet delicious strawberry sauce. But it doesn't matter what you do if the strawberries aren't ripe. It's not that they're out of season, because that would mean there wouldn't be any strawberries.

We use like an angel food cake or sponge cake with strawberries & whipped cream, or sometimes we'll make a kind of sweet biscuit, cut it in half or crumble it, and then put chopped strawberries in syrup on top of that, with whipped cream, and sometimes crushed nuts like walnuts or pecans... Tasty either way. Fun dessert.
When I make strawberry shortcake, I clean and cut up strawberries, and then put sugar on them overnight, that makes a nice sauce. I'll put the shortcake in a bowl, put strawberries on top with some of the sauce the berries and sugar made, I'll pour in some milk, then put whipped cream on top. Delicious.
Perfectly ripe strawberries are sweet. Not sour. Pls strawberries for strawberry shortcake have to be maserated in white sugar for hours before eating to make them sweeter, softer and make a syrup to be drizzled over the dessert when you serve it
I just wait for the fruit to get ripe and mash it with some sugar anyway because that's how you do it. Strawberries will continue to ripen after they're picked they don't end up tasting the same as if they were picked ripe but it still works. That's why the ones in the grocery store don't taste nearly as good as the ones at a farm stand do. The ones in the grocery store are picked just like bananas, under ripe so they don't go too far by the time they hit the shelves.
Is this one with angel food cake? My family had strawberry shortcake with Jiffy biscuit mix and milk and it was wonderful. I've never liked it with angel food cake and whipped cream.
It looks like they used to Pound Cake which is kind of common in the northern states. The southern states use a shortbread biscuit and since Duncan Hines and Betty Crocker came out with their angel food cake mixes, people all over the place have been using angel food for it. Happens to be my favorite way. When I noticed is that it doesn't look like they macerated the strawberries in sugar, just cut them up. It's got to be especially nasty if those strawberries aren't ripe enough, which that's what it sounds like.
Looks like they may have used pound cake. That's one of the two most common variations to Strawberry shortcake. The other one is a sweet baking powder biscuit. Generally the northern states use pound cake and the Southern States use shortbread biscuits.
Please teach these people how to use a fork like a knife. You can't use a spoon on a cake it just doesn't work, the bites are too big and they will choke. Throw those spoon out the door.
I really don't know why anybody uses biscuitish shortcake, when a sponge cake or pound cake is better. And using cheap, non ripe strawberries without some form of sweetening or additional flavouring... Why bother?
Auntie scares me. She takes such big bites I am afraid she is going to choke. Please please tell her to eat small bites slowly. This is not fun to watch.
