They do the same cooking in Azores , Portugal . Specifically at São Miguel Island by the Furnas Villlage. Stew Pots brought in by 6am and picked up by 1pm. Tied into a twine , the pot must be tightly wrapped. A civil servant drops the rope a few feet deep.into,the vapor.
In the pot , the choices boil down to potatoes , sweet potatoes , pork sausage, cuts of pork and beef, cabbage , eggs.
No direct contact with the water.

I was there on honeymoon, it was excellent! Delicious slow cooked chicken that was cooked in hot sands by a geothermal vent.
The traditional way we do it is in the ground with baskets , wet cloth and hot rocks everything is buried under dirt that traps the natural steam produced from the hot rocks and wet cloth this is just the way these locals cook it’s easier without having to heat the rocks or digging the hole ,I grew up here and it being in the hot pools makes no difference to the taste , it’s interesting that a lot of cultures have similar customs when it comes to food .
