Amen! the cutting technique is a nightmare for anyone trying to get 5 stars. Fries are just rediculous. Great idea to have a perk that shows how many grams your cut will be!
I suppose the most you can do is spend whatever leftover prep time you have before the day starts, cutting things to get that pinpoint perfect size, and stockpiling all of the perfect ones to put on the dish. A bit cheesy, but that's the only way I can think of eliminating the issue of cutting technique. Although of course, it'll burn up a hole in your pocket as a downside...
