1 Kg Marlin Fish
Charcoal/Coconut Fiber (Sambuk) to taste
Skewers to taste
Spices:
10 Cloves of Shallots
16 Cloves of Garlic
25 Chilies
2 tablespoons Shrimp Paste
12 cm Galangal / 6 Finger Joints
12 cm Galangal / 6 Finger Joints
10 cm Turmeric / 5 Finger Joints
8 cm Ginger / 4 Finger Joints
10 cm Jangu / Jeringau (5 Finger Joints)
6 Candlenuts
1 Nutmeg
1 tablespoon Black Pepper
2 tablespoons Coriander
1 1/2 Small Palm Sugar (6 tablespoons)
3 Bay Leaves
1 tablespoon Chicken Stock if you like
Salt enough
Cooking Oil enough
