The ingredients that you will need are
Double zero pizza flour (Caputo Red) (1kg)
Instant yeast (3g)
Salt (3g)
Water (630g)
Method
Mix 3g the yeast and the 630g of water together until the yeast has dissolved

Once dissolved, gradually add the flour until the dough becomes to stiff to stir with the folk.
Add half the remaining flour to the work surface leaving the rest to scrape out the bowl.
Fold in the flour to the dough, once incorporated, it’s time to knead until the dough is smooth.
Once smooth cover and rest for one hour. After the hour, fold in the 25g of salt and knead for around 5 minutes.
After 5 minutes, place the dough into the floured mixing bowl l, cover and rest for one hour.
After two hours it’s time to make the pizza balls. Each ball is 230g, alternatively you can place around 700g into a non-stick baking tray.
Once formed cover and rest for a further two hours.
After two hours the dough is ready for shaping and adding the toppings.
For Neapolitan pizza warm the oven to the maximum temperature and bake each pizza for around 5-7 minutes.
For the tray pizza the oven temperature is 200 for 20 - 30 minutes.
