Mongolian language is such beautiful, harmonic, poetic and the most spiritual. Because it's hard to find the language to translate our speaking language. We do have the poetry competition and Mongolians love to participate it every year. There is no any country has such poetry competition like us. the Sacred pastry uses for Lunar New Year celebration. Love watching our tradition and culture.

Not every but a lot of family have their own symbols and most people of mongolia this time usually buys their Ul boov from bakery mostly because of covid and there is very few families that actually do their own "Ul boov" because its easier to buy it from bakery i guess

You either get strong from kneading the dough or already strong to knead the dough 💪The designs are so fancy 😍 Is it traditionally eaten plain, or are there different toppings like cinnamon sugar or chocolate?
There is no "traditional" eating mehtod. You can eat with anything that tastes good. For us, in old days, all these fancy things weren't common so we eat them milk cream or just eat plain.
Awesome. Especially elder guys were very skilled for making ul boov. How do you know that he was skilled? If ul boovs sizes ended up to be consistent and no bubbles, it means maker is very skilled. And for clarification. WE DON'T USE VEGETABLE OR OLIVE OIL FOR FRYING UL BOOV. Traditionally we use ghee for frying. But ghee is so expensive nowadays. As an alternative we used oil that's extracted from meat fat. But that's considered not so healthy. So we use oil from bonemarrow. Even that has become rare lately. I don't know about oils used in west to fry pastries, so you can test those oils. But NO vegetable and olive oil. Vegetable oil makes ul boov TOO oily and also affects the taste. Using it is actually considered bad practice. Here, Mechta oil was their sponsor I guess. About layers, we don't use that extreme numbers like 21. It's just for youtube video and for your entertainment. We mostly use 5. Elders can have 7 layers. And 9 layers for state events. If you're young family (mostly younger than 40) whose parents are still alive, you only can have 3 layers. And I've seen people used 7 layers of ul boov for wedding ceremony. But 9 is only for state events.
Oh, lard may be the western frying fat of choice then! I swear by lard for deep frying meat pies. Higher smoke point than unclarified ghee and cheaper than regular ghee! Pork is rare in Mongolia though.

The celebration of the Lunar New Year began in the 13th century. Before that, Mongolians used to celebrate the New Year in autumn. The food culture of new years eve, especially the sole-shaped cookies- Ul boovs, originated from Tibet. Through Buddhism, the Mongols inherited the culture of decorating with tibetan khabsey in last 300 years. The ceremony was interrupted in the 1960s and resumed in the 1990s. In an ordinary household, this cookues tray is usually made of 3-5 levels of ul boovs. Mongolians usually decorate their new year charcuterie board with dairy products. And they eat dumplings-buuz during new years days.
