Crazy coincidence... I've been on an Italian food kick all this week! Monday night I picked up the BBQ half chicken / spaghetti marinara combo dinner from Big Nick's in San Pedro, Ca. Tuesday night I went BACK there to pick up a chicken alfredo dinner combo for mom. And earlier tonight, just before finding this video, I finished a footlong Subway spicy italian!
@@mobvlog Tonight I'll probably finish the tiny bit of leftover spaghetti marinara I have, along with some generic take out pizza from somewhere. Some of the best pizza I've had is from a little place in Torrance, Ca. called Giorgio's. In the city of Alhambra there's Angelo's, famous for their three-foot diameter party sized monstrosity. Out in Orange County there used to be a business called Company 77 Party Pizza.. The guy's schtick was this- he had an old Pierce fire pumper truck that he converted into a mobile pizza kitchen. He had these different menu "packages" that could serve between 20 and 50 people. He'd do weddings, proms, retirements, etc. Unfortunately two fucked up things happened. First, the truck had some major mechanical breakdown. Second, California's new bullshit diesel smog regulations made his truck basically illegal to run without literally tens of thousands of dollars' worth of engine upgrades. Those two things basically drove him out of business.

I grew up in South Bend, Indiana. In 1965, my Dad introduced us to Chicago Deep-dish. He took us to Pizzeria Uno at Wabash and Ohio. The pizza at Uno's was not stuffed, and the choice you had at time in history was either plain or sausage. The actual goodness of the unstuffed pizza is the consistency and the very, very mildly "aromatic" (without really being aromatic) "bouquet" of the dough. As Mr. Culotta says, on top of the dough, you put a heavy layer of cheese and, then, the sauce. For many years, the sauce at Uno's resembled plain simple stewed tomatoes. There is nothing, absolutely nothing like the flavor of true Chicago deep-dish. Thank you, Mr. Culotta, for detailing your Mother's recip and process here. Every time I go back to South Bend, I stop off in Chicago and make sure to pick up some Pizzeria Uno pizza. (I never get out of the nearby Walgreen's parking lot without having had two slices.) The stuff is addictive. Again, thank you very much, Mr. Culotta. You should be nominated for sainthood.

I think it was taken by his daughter not long before he passed. Were there any Outfit members or associates that were known for being great cooks? That's a nice lookin' pie and for a second I thought I could smell it. We have a certain family here that makes our kind of pizza. I guess it's not our kind, it's their kind 'cause they developed it. As the family got bigger some of them struck out on their own under their own names. They each changed the original recipe just a little, so naturally we each have our favourite place to get it. Years ago when I was a young fella I worked at one of the places and made the pizza. I paid attention and learned exactly how they did it and I still remember. Mmmmmm it's good stuff.

Hey Frank, have you ever had Chicago Guy's Pizza off Durango in Centennial? If so, would you classify it as an authentic Chicago style pizza place? Other than Giordano's, I think that's the only Chicago pizzeria in Las Vegas. Well, and Amore too. But that's more of a full restaurant.

The only time we don't put bones in the sauce (gravy back home in Newark) which is usually pork neck bones, veal shank and oxtails is when we do the St. Joseph's day lunch. Good looking pie, a little Vino, meal done.
