This question is far to complex to answer on TH-cam. Also, considering yourself a professional service provider towards customers I would very strongly advise against gaining the necessary in-depth knowledge on youtube. If you need youtube for providing support to your client then you need to reconsider your activities. My advise would be to go through the MD101 Microsoft Learning Path (available online for free) It includes the explanation on the differences between ON-prem AD and Azure AD and therefor the complications on GPO's. It also handles all types of policies and most of all the Device Configuration Profiles (which is the closes to GPO you will get in Intune) but also as mentioned in this video the importance of the Group Policy Analytics tool.
Hi, Vince is correct here, there are many things to consider and it’s a large topic. There is no such thing as migrate on-prem AD. You can sync identities to Azure AD and recreate matching policy settings using the video details.

Will the MDMWin over_GPO break all the Local GPOs and only use MDM policies or will it only affect the Conflicts?
Hi MrSadlerd3 MDMWinsOverGP only applies to policies in Policy CSP where there is an equivalent GPO. It shouldnt break all local GPOs.
