How to Make Demi Glace
Recipe:-
Brown Sauce
Ingredients: -👇
Mutton bone - 30kg
For Mirepoix:-👇
Carrot - 03kg
Onion - 06kg
Celery - 01.5kg
Leek - 01.5kg
Garlic - 03kg
Tomato - 03kg
Tomato puree - 04kg
For Roux:-👇
Yellow butter- 04kg
Tej patta (bye leaf) - 10 pieces
Black Pepper - 50gm
Maida (refined flour)- 04kg
After Ready Sauce Qty.- 90kg
Process:-
First of all take mutton bones
and roast them (brown)
Cut out the Mirepoix
Roast them too
Now put all the material in the pot
Put it on the gas
Put tomato pure and keep cooking for 2 days
If the water dries up, add it again
Now it's time to strain the sauce
Now let's make the roux
When butter melts,add bay leaf, whole black pepper and refined flour
Let it brown. add stock when it turns brown. let it boil
Now let it cool down
Take it out in a pot and store it.
