    So rub in oil, place in dough press machine, close it , push green bottoms on both sides , and add flour to the board? That easily I got trained on the machine and I don’t even work at blaze lol.

    we have blaze pizza in the food court in the shopping mall that I work in it's movie theater.

      I have no idea, as i've only seen them in use at the various Blaze Pizza locations.

    Anybody have any idea what temperature the dough is at when they press it? Or the hydration level?

      the dough sits in the freezer in a puddle of oil, we take enough for about 20 crusts out at a time, the press is 242 F

      machine heats up the plate to like 110 F. you can put room temp or refrigerator cold dough on the machine except the pressing takes a little longer if the dough is cold.
      those machines like $2k to $9k. they allow you to make quality pies without a skilled labor and quickly. most pizza places can't make that many doughs that quickly without these machines. but the main selling point is you don't need a skilled pizza maker which is annoying to hire because if they quit you're screwed a little bit. you can also buy a machine that rolls the dough into balls for cold fermentation in the refrigerator.

      Don’t assume that people only frequent one pizza place. I prefer authentic nyc style pizza, but as far these quick, fast food pizza places it’s pretty good, especially for the huge selection of toppings. It’s not my “go to” pizza place.

      I like going to Blaze a couple times a year for toppings and combinations that I like. Not my first choice for pizza, but absolutely nothing wrong with it for what it is.

      To each his own. I know how to make pizza at home, sometimes I do, and sometimes I prefer to go out and eat. Blaze does make their dough in house. Placing toppings on dough is not really an art. It’s not a factory.
