in perk decisions on the 3rd perk (class change) it won't change it right away it's just when you put Gunther in a Class Change promo slot that will allow him to swap to the other class (kindda like the role change allows to swap between Heel/Face anytime given)

In 2k24, they can have more than one class option. Her default is giant because compared to most other women, she's one of the biggest in both height and build. Also, they needed more giant ladies and she's the next best one to add.
