My FMAB obsession makes me wish you covered a little bit more about the events of Roy, Hughes, Armstrong, and Riza’s time during the Ishvalan Civil War, and maybe even the Wii games (they take place in a nation that is only mentioned briefly in the series); but honestly you did an amazing job covering the most important key plot points. I feel like to do an exhaustive history it would take a whole hour or maybe more.

When Edward first starts as a state alchemist I believe he's like 12-13, then he actually ages through out the show. So there's no way it was only a year. He was 17 or 18 at the end of brotherhood.
The statealchemy exam was a flashback (in both FMA03 and FMAB) so there was a time jump of 3 years in the show. And their was a time jump right at the end a few days before the promised day. They waited and planned for a few months.

The last few years of Edward's life got cut off, he didn't age a few years because he used his life as a Philosopher's stone. The one reason I could think of for his growth spurt would be that the connection between him and Al's body started getting weaker.

They got quite some things wrong. Mustang knew about their human transmutation, May didn't hide inside Al while they fought Gluttony, the Mustang and Envy bit, the transmutation circle that Scar's brother developed. They forgot to mention Hohenheim's transmutation circle and that Al regained his memories of the Truth. Or how Kimbley got chewed up by Pride. Or the human chimeras.

Things I would've loved happening (sorry for bad english) : 1-Sloth having a limit on how much he can work (that limit being ishval,so he can't do brigs) and the father kills him and gets his philosopher stone searching for a new candidate 2-Instead of killing hughes envy finds him as a good candidate for the new sloth (they both have alot of job to do but they want something else with sloth just wanting to relax and sleep and hughes just wanting to be with his family) so hughes becomes the new sloth 3-greed being the only homunculus to survive at the end of the story instead of pride but he lost his memories forever just like what happened to selim, showing that greed chosen the right way and the only reason the homunculus were bad is because they grew up like that (how they will keep him alive you say,well having a part of him be with the father before he gets drawn to the gate of truth just like how a fetus survived from pride but there is no need for 2 homunculi surving so there is no need for pride surviving,so before father is drawn to the gate greed is extracted from him and stays at the gate of truth then the whole Ed sacrificing his door to get Al back happens and he sees greed there so when he comes back he tells ling about it so hohenheim forces ling into human transmutation just like what happend with mustang and pride and make that the reason why hohenheim started dying, then ling sacrifices the immortality that the philosopher's stone gave him to become greed's host again and having immortality)
